Banana Lentil Muffins

Ingredients

  • 1 egg, slightly beaten
  • ½ cup canola oil
  • ½ cup sugar
  • 1 cup bananas, mashed
  • 1 cup green lentil purée*
  • 1 tsp vanilla
  • 11/3 cup whole wheat flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ cup raisins

 

Directions

  • 1. Preheat oven to 200° C (400° F).
  • 2. Combine egg, oil, sugar, bananas, lentil purée, and vanilla. Mix well.
  • 3. Mix together flour, baking soda, baking powder and raisins. Stir into egg mixture only until combined.
  • 4. Spoon into greased muffin tins 2/3 full.
  • 5. Bake for 15-20 minutes.
  • *Lentil Purée Place cooked or rinsed & drained canned lentils into a food processor. For every 1 cup lentils, add ¼ cup water. Blend to make a smooth purée with a consistency like canned pumpkin. If needed, add additional water 1 tbsp at a time.
