Lentil & Chickpea Salad with Creamy Lemon Yogurt Dressing

Ingredients

  • 1 cup chickpeas, cooked
  • 1½ cups green lentils, cooked
  • ¼ cup dried cherries
  • ¼ cup cilantro, chopped


For the Dressing

  • 1 lemon, zest and juice
  • ¼ cup yogurt
  • ¼ cup olive oil
  • 1 tbsp dijon mustard
  • salt and pepper to taste

 

Directions

  • 1. In a jar or container with tight fitting lid, add dressing ingredients. Place on lid and shake.
  • 2. Then, in a large bowl, toss together chickpeas, lentils and dried cherries. (Everything can be done ahead up to this point).
  • 3. When you are ready to serve, pour the dressing over the chickpea mixture and toss. Then stir in the cilantro. Season to taste with salt and pepper.
