Lentil & Rice Pilaf

Ingredients

  • 2 tbsp butter
  • 1 cup brown rice, uncooked
  • 1 large onion, chopped
  • 1 red pepper, chopped
  • 3 green onion, chopped
  • 4 cups water
  • 1 tbsp chicken stock
  • 1 cup dry green lentils
  • 1 can mushrooms with liquid, chopped
  • ½ tsp thyme
  • salt and pepper to taste

 

Directions

  • 1. Sauté rice, onions and red pepper in butter for five minutes. Watch closely as it burns easily.
  • 2. Add remaining ingredients. Bring to a boil. Turn heat to low and cover tightly.
  • 3. Simmer one hour.
