Pina Colada Cream Pie

Ingredients

Crust:

  • 11/4 cups graham crumbs
  • 1/4 cup margarine, melted
  • 2 tbsp liquid honey

Filling:

  • 2 1/2 cups red split lentils, cooked
  • 250 g low fat cream cheese
  • 1/3 cup liquid honey
  • 1 tbsp canola oil
  • 1 tsp cornstarch
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 14 oz can unsweetened crushed pineapple, drained
  • 1/2 cup shredded unsweetened coconut

 

Directions

  • 1. Preheat oven to 180° C (350° F).
  • 2. To prepare crust, combine graham crumbs, margarine and honey. Mix well. Press into 22 cm (9 inch) pie plate.
  • 3. In a food processor, combine lentils, cream cheese, honey, oil, cornstarch, vanilla and salt. Blend until puréed. Pour into mixing bowl. Stir in pineapple and coconut. Pour into pie shell.
  • 4. Bake 20 minutes. Remove from oven and cool. Cut into 12 wedges.
