Red Lentils & Rice

Ingredients

  • ½ cup dry split red lentils
  • 1 cup brown rice
  • ¾ cup coconut milk
  • 2¼ cups water
  • 1 small onion, chopped
  • 1 tbsp margarine
  • ¼ tsp thyme, dry and crumbled
  • ¼ tsp garlic powder
  • ½ tsp curry powder
  • ¼ tsp ground ginger
  • ½ tsp salt

 

Directions

  • 1. In a saucepan, combine lentils, rice, coconut milk, water, onion, margarine, thyme, garlic powder, curry, ginger, and salt. Stir.
  • 2. Bring to a boil, cover and simmer for 50 minutes.
