1/2 cup (125 mL) butter, melted
3/4 cup (175 mL) packed brown sugar
1 large egg
1 1/2 tsp (7 mL) vanilla
1 cup (250 mL) all-purpose flour
1/4 tsp (1 mL) salt
1/2 cup (125 mL) lentil puree *
1/2 cup (125 mL) chocolate chips
1/2 cup (125 mL) toasted walnuts
* How to make lentil puree: Place cooked, or rinsed & drained canned lentils into a food processor. For every 1 cup of lentils, add 1/4 cup water. Blend to make a smooth purée with a consistency like canned pumpkin.
