Muesli is a fibre- and protein-rich breakfast and brunch option based on raw, rolled oats and other diverse breakfast ingredients - our favourite being lentils, of course!
1 Tbsp (15 mL) unsalted butter (for baking dish)
8 cups (2 L) cubed whole wheat bread
1½ cups (375 mL) cooked or canned green lentils, drained & rinsed
1½ cups (375 mL) diced Gala apple, core removed
1 cup (250 mL) dried cranberries
1 cup (250 mL) rolled oats (reserve some for topping)
1 cup (250 mL) chopped pecans (reserve some for topping)
1 cup (250 mL) 2% milk
6 Tbsp (90 mL) honey
1 tsp (5 mL) cinnamon
1 tsp (5 mL) vanilla
¼ tsp (5 mL) salt
1 cup (250 mL) Greek yogurt
