Curried Lentil Lettuce Wraps

Ingredients

    ¼ cup minced yellow onion

    1 tablespoon extra virgin coconut oil

    1/4 cup low-sodium vegetable broth

    1 small Roma tomato, minced

    2 teaspoons fresh squeezed lemon juice

    ½ teaspoon minced garlic

    1/16 teaspoon ground coriander

    1/16 teaspoon cumin

    1/16 teaspoon turmeric

    1/16 teaspoon cinnamon

    1/16 teaspoon ground black pepper

    ½ cup cooked green lentils

    3-4 large outer Romaine leaves


Directions

  1. In a medium pan over low heat, sauté onion in coconut oil and broth until translucent. Add tomato and seasoning ingredients and stir 3-4 more minutes. Add lentils to heat through.
  2. Fill romaine leaves with mixture just before serving.
